I really dislike this recipe! It does not include instructions about what cleaning is--just washing or removing the skin. Nor does the recipe include instructions or links on how to safely and appropriately "seal" the jars to maintain sterility. Is a water bath required? If not sealed in a water bath, what is the shelf life of the product? Oh my, too many details left out. I wonder what my local USDA home specialist would say about this recipe?

I made this last night it is wonderful and easy and i am so sorry that you don't like it like it i washed the peaches and slit them in haft and baked them with the skin on I used a fork and spoon to get the flesh out of the skin. I did how ever do the sterilized jars an water bath for 10 minute. This a uk recipe because of the kilograms we do pounds or cups here in the us. I can say how ever i do like this because of the fact it do not call for adding sugar in. and my dear sweet hubby has diabetes.
  • 5 kilograms peaches
  • 200 grams white chocolate (you can use dark chocolate if you want)
Chocolate jam recipe instruction:
Clean the peaches, divide them into halves, remove the peach pits and place them in appropriate sized dish for baking.
Bake the peaches in 180°C for about 3 hours or till peaches fall apart and thicken (take them out from oven periodically to stir them).
Peach jam is finished when wooden spoon left clean tracks in the bottom of dish while you mix it.
Remove your sugar free jam from oven. Stir chopped chocolate in hot jam and mix it till chocolate melts in it.
Pour hot chocolate jam in sterilized and warm jam jars, seal them and cover jars with a blanket to cool gradually over night.
Store your gourmet jam in cold place.

I dislike the recipe not because it is from the UK or that it uses metric measurements. I know how to convert. I have been canning, freezing, and preserving for more years than I care to share and have made sugarless jam. Some who are new to preserving may not know how to accomplish all tasks or attempt to store too long. There definitely are some safety issues with this recipe!!!
