      Wink Carrot Cake

      1 cup of sugar
      1 cup of oil
      2 eggs

      Combine these 3 ingred.

      Then add and stir well
      1 1/3 cups of flour
      1/2 tsp salt
      1 1/3 tsp baking powder
      1 1/3 tsp of Cinnamon
      1 1/3 tsp of soda

      fold in 2 cups of grated carrots
      1 cup of walnuts

      bake at 300 for 1 hour or more you can use a 9 by 12 pan, or I use a oval baking dish. Bake until done

      Carrot Cake is good but what I really like is pumpkin bread, it's really good with tea.

      Pumpkin Bread


      Mix and let sit for 10 minutes:
      5T yeast
      4T sugar
      1 1/2 C water (110*F)


      Mix and add to the yeast mixture:
      1 stick and 2T of butter melted
      2 eggs
      1C milk
      1 1/2C pumpkin


      Add 4C flour than 3T sea salt
      Add 8C flour


      The dough will be soft. Knead in mixer 8 minutes. Put in greased bowl for 1 hour. Punch down and shape into 6 loaf pan(9X5)* brush with milk, let rise until doubled (about 1 1/2 hour).


      *or 8 loaf pan (4x2.5)

      Sorry, here in America butter is sold in pound boxes four sticks to a box. So one stick is 8 tablespoons or a half a cup. All the cups in the recipe are 8 ounce cups. Hope this helps. I use steamed Punkin that I harvest steam and freeze myself. You can also use canned pumpkin if that's available where you are

      Thank you. Here in RSA we don't get get butter in sticks or pumpkin in cans ether.
      I harvest steam and freeze myself as well. As soon as i have made your pumpkin bread i will let you know

      Lovely recipes! May I suggest that you try making Carrot Cake Muffins? They're a good treat to bring at work, in school, in dance rehearsals. I have made some of these myself and me and my co-dancers loved it!
