      Default Aint Your Granny's Fruit Cake

      My husband is on dialysis and is a diabetic. I found this recipe and it has been approved by a nutritionist working with these type of patients. So here goes!

      Aint Your Granny's Fruit Cake

      1 yellow cake mix
      3 eggs (use the "fake ones" if you are concerned about cholesterol)
      1/2 cut oil
      1 can (do not drain) crushed pineapple or mandarin oranges (go for "in own juice" or "light", if you use the ones in heavy syrup, it no longer meets the diabetic standards)

      Mix and bake at 350 F for about 45 minutes. When toothpick inserted and removed is "clean", it is done. I have noticed that it is done by seeing that it is pulling away from the sides of the pan and the top has "cracks" it in.

      "Frosting"
      small container of Cool Whip (or what ever brand you like to use that is like Cool Whip)
      1 small box Vanilla Pudding - no sugar added
      1 bag thawed strawberries -or- 1 can mandarin oranges (as indicated above) -or- 1 can crushed pineapple (as indicated above).

      Mix and spread on cool cake.

      store in fridge for up to 4 days (if using strawberries, the time may be only 3 days).

      I have had folks "fight" over this desert at Church dinners once they got past the name (no many people I know of like the old fashion fruit cake).
