      Categorize means when a new set is released everyone has a chance to decide which categories the set belongs in based on different things like what type of sewing it is, Ex. redwork, project, filled design etc. then there is the choice of season or if its a holiday, animal and so on. If 10 people agree with you on the category, then the set is put in that category. So when a new set is released if you click on vote for a design in this set it will say categorize this set, if the set is done then it will say see voting results. If you get the chance to categorize, you also get points if 10 people agree with you on the category and you can use the points toward the purchase of this set or other sets.

      Go to any set and click on vote for a design and then click on category results just to see how it was done. You will also pick up more info as time goes on. The sets are released every few days and at different times so everyone from different time zones gets a chance. There is also no prior notice, its mainly just luck if you get a chance and sometimes its mentioned in chat. There is also a notice in the forum. Hope this bit of info helps
